The Kitchen

Simple Italian Food

Fueled by a core group of cooks who have been with us for years, MiNGO takes produce from local farmers and puts simple Italian food on your table.

The Chef in the kitchen is  Martín Gomez. Martín and owner Michael Tocchini collaborate on a new menu every 6 weeks or so, coinciding with the solstices and equinoxes to maximize the seasonal bounty here in the Willamette Valley. We like the flavors to speak strongly and with grace, uninhibited by cookbook coercion and overdone costuming. From our simple side of housemade pasta with extra virgin olive oil and grano padano cheese to our risotto with 2-3 ingredients, each dish has it’s distinct character which speaks to our vision.

People inside and outside the kitchen contribute to the food you receive on your plate at MiNGO.

From inside we have:
Martín Gomez 6+ years
Adolfo Calderón 6+ years
Marcello Martinez 4+ years
Jorge Chan Ramirez 4+ years
Carlos Gomez 3+ years
Irma Zamorano Barrera 3 years
Luis Melgar with us for 2, with Caffe Mingo for who knows how long!!
Daris Ray
Felipe Chable
Mariano Dzul

And to two of our long time favorite and skillful organic farmers who dominate the plates here at MiNGO:
Steve Rogers of Singing Pig Farm
Scott Frost of Nature’s Fountain

We humbly offer our gratitude and thanks for the food they bring us to bring to you.

we thought we'd visit Mingo, the offspring of one of our favorite Portland restaurants, Caffe Mingo. Glad we did because we enjoyed...
    ...top notch service.
..great cocktails and a wine list that broad enough but not overwhelming and reasonably priced with the added benefit of by the glass wines available as 3 oz or 6 oz pours.
...creative menu coupled with very good, professional kitchen execution for food flavors and presentation.
...portions and prices just right resulting in good value.
...delightful ambiance on a summer evening with the back doors rolled up and an "all are welcome here" vibe..

We booked our wedding reception here because they were one of the only restaurants that offered us a private room for our gathering. But what we were MOST impressed by was the great food and superb customer service! WOW! We highly suggest you consider this place for wedding receptions because it is ground level, close and easy parking, a beautiful outside seating area adjacent the MAX station and great atmosphere.

Their delicious dishes artfully prepared and presented with fresh ingredients from local farmers. The daily made ravioli melts in your mouth and is absolutely superb. If you get on their newsletter list, you find out about all kinds of cool, innovative events to bring the community together. The wine list is amazing and so are their cocktails. Lastly, and very importantly, the service is TOPS. It's definitely a valued treasure in Beaverton...the atmosphere is very hip, it's especially enjoyable when it's nice enough to open the big garage type doors and sit outside.

Best Italian meal, bar none, ever. Better than Salute in Marin County, better than Italy on the island of Capri, better than any and all meals in Cortona, Gaeta and Sperlonga put together. Better than Venice, and at least tied with some of our meals in Rome.
